Raw salads are best eaten before the main meal course. This is because salads have a high enzyme content which is necessary for the digestion of proteins and other foods. When eaten first they aid digestion of the rest of the meal. Salads are very satisfying and when eaten first will lessen the danger of overeating food and aids in the prevention of obesity. Ideally, serve fruit salads with fruit meals and vegetable salads with vegetable meals. Never serve them together.
