With modern methods of intensive factory farming, much of the meat we eat is likely to contain residues of chemicals and other additives such as antibiotics. Lamb is generally the safest of meats to eat, since most are reared naturally in open pastures.
Useful advice to steer well clear of processed meats, since these contain a high proportion of preservatives, colourings and flavourings, including nitrites and nitrates which are suspected of being cancer inducing. Although it is now recognized that meat is not an essential part of the diet, it does provide a rich supply of first-class protein, i.e. that containing all the amino acids needed by the body. Meat is also a good source of vitamins, especially vitamins A, B complex and E. Also present are the minerals iron, copper and phosphorus. The organ meats such as liver and kidneys are particularly rich in iron and vitamin A.
